Oatmeal Chocolate Coconut Chewy
Ingredients
- 1 cup butter, softened
- 1 1/4 cups packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 tablespoons milk
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 3 cups rolled oats
- 2 cups semisweet chocolate chips
- 1 cup chopped walnuts (optional)
- 1 cup shredded coconut
Direction
- Set the oven to 375°
F (190°
C), and start preheating.
- In a large bowl, cream white sugar, brown sugar and butter together until smooth. Beat in eggs one at a time, then mix in vanilla and milk. Stir salt, baking soda and flour together; mix into sugar mixture till well combined. Mix in coconut, walnuts, chocolate chips and oats till evenly distributed. Drop by rounded tablespoons on a dry and clean cookie sheet.
- Bake in the oven for 10 - 12 minutes for a chewy cookie or 14 minutes for a firmer cookie.
- Cool on the cookie sheet in 1 minute; then discard to wire rack. Let it cool completely; then store in a tight sealed container.
