Oatmeal Date Cookies
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup packed brown sugar
- 1 cup shortening
- 3 eggs
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 2 cups quick cooking oats
- 1 cup dates, pitted and chopped
- 1/2 cup chopped walnuts
Direction
- Set oven at 375°
F and start preheating. Use cooking spray to coat cookie trays.
- Sift the salt, baking soda, baking powder and flour together in a different bowl. Put aside.
- Whisk shortening with both of the sugars with an electric mixer at medium speed in a big bowl until fluffy and light,
- Add one egg at a time, whisk well before adding another. Whisk in vanilla.
- Add dry ingredients into the creamed mixture little by little, use spoon to blend well.
- Mix in walnuts, dates and oats.
- Drop them by teaspoonfuls, about 2 inches away from another on the cookie tray.
- Let bake until they turn light brown, or for 8 minutes. Take to racks and let cool.
