Old English Lemon Cranberry Cookies
Ingredients
- 2 cups all-purpose flour
- 1 cup white sugar
- 1 teaspoon baking soda
- 1/2 cup chopped walnuts
- 1/2 teaspoon ground cloves
- 1 egg
- 1/2 cup applesauce
- juice from 1 lemon
- 1 teaspoon vanilla extract
- 3/4 cup dried cranberries
- zest from 1 lemon
- 1/4 cup butter, softened
- 2 tablespoons confectioners' sugar
Direction
- Set an oven to 175°
C (350°
F) and start preheating. Coat 2 baking sheets with cooking spray.
- In a large mixing bowl, combine cloves, walnuts, baking soda, sugar and flour. In an individual bowl of an electric hand mixer, whisk together butter, lemon zest, cranberries, vanilla, lemon juice, applesauce and egg; then add into the flour mixture and combine thoroughly. Drop the dough by spoonfuls onto the greased baking sheets by 2 inches apart.
- In the prepared oven, bake for 10 minutes until the edges turn golden. On the baking sheet, let the cookies cool for a minute, then transfer onto a wire rack to cool entirely. To serve, dust with the confectioners' sugar.
