Orange Meltaway Cookies
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 cup butter
- 1 1/2 cups sifted confectioners' sugar
- 1 teaspoon orange extract
- 1 tablespoon grated orange zest
- 1 beaten egg
- 1/2 cup confectioners' sugar, for dusting
Direction
- Set the oven to 375°
F (190°
C) to preheat. Use parchment paper to line cookie sheets and put aside.
- In a bowl, combine cream of tartar, baking soda, and flour. Whisk 1 1/2 cups confectioners' sugar and butter together in a separate bowl using an electric mixer until fluffy and light. Stir in egg, grated orange zest, and orange extract. Mix in the flour mixture and mix thoroughly.
- Drop the dough by teaspoon-sized portions onto the cookie sheets lined with parchment paper, approximately 2-in. apart. Once baked, the cookies will expand to approximately 1 1/2 inches.
- Put in the preheated oven and bake until the cookies turn light brown, about 10-14 minutes. Take out of the oven and sift onto the hot cookies the leftover confectioners' sugar. Let cool and put in an airtight container to store.
