Peanut Butter Oatmeal Cookies
Ingredients
- 1 1/2 cups shortening
- 1 1/2 cups peanut butter
- 2 cups packed brown sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 3 cups quick cooking oats
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon salt
Direction
- Preheat oven to 180 degrees C (350 degrees F).
- Cream peanut butter, and shortening in a mixing bowl. Put in vanilla, eggs and brown sugar; stir them well.
- Mix salt, baking soda, flour and oats together; put into the creamed mixture and stir them well.
- Drop by the rounded teaspoonfuls into the ungreased baking sheet. Flatten using fork. Bake till done, about 12 minutes.
