Popcorn Macaroons
Ingredients
- 2 cups popped popcorn
- 3 egg whites
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 2 tablespoons granulated artificial sweetener
Direction
- Heat the oven to 175°
C or 350°
F. Grease the cookie sheets slightly. In blender or food processor, put popped popcorn; grind, making tiny kernels.
- Beat egg whites in big bowl till foamy. Put in salt, cream of tartar and baking powder; keep beating till firm peaks form. Little by little stir in sugar substitute. Fold popcorn pieces in. Drop teaspoonfuls of mixture to prepped cookie sheets.
- Bake in prepped oven till slightly browned, about 12 to 15 minutes. Cool cookies on cookie sheets prior to taking.
