- 1 1/2 cups packed brown sugar
- 1 1/2 cups white sugar
- 4 eggs
- 4 teaspoons vanilla extract
- 4 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt

Direction
- Set oven to preheat at 175°
C (350°
F).
- In a large bowl, cream the white sugar, brown sugar and butter flavored shortening together till smooth. Beat in the eggs, one by one, then mix in the vanilla. Mix together the salt, baking soda and flour; mix into the creamed mixture. Finally, fold in the macadamia nuts, coconut and chocolate chips. Roll the dough into 1-inch balls and put them onto ungreased cookie sheets 2 inches apart from each other.
- In the preheated oven, bake for 8 to 10 minutes. Allow the cookies to cool down for 5 minutes on baking sheet before taking out to a wire rack to cool thoroughly. Serve! - They will have a chewy texture. If you prefer crispy cookies, raise the cooking time to about 12 minutes. (My mom likes them being burnt!)
