Vanishing Oatmeal Cookies
Ingredients
- 1 cup margarine, softened
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup raisins
- 1 cup black walnuts, coarsely ground
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 3 cups rolled oats
Direction
- Set the oven to 175°
C or 350°
F to preheat.
- Beat sugars and margarine until creamy. Put in vanilla and eggs, then beat well together. Mix together spices, salt, baking soda and flour. Sift and add to the egg mixture while stirring well.
- Grind raisins up together with 1 tsp. of sugar until they turn to small pieces yet not mush. Stir in raisins, nuts and oats, then mix well. Drop the mixture on grease-free cookie sheet by tablespoonful. Bake until turn light brown, about 10-12 minutes. Allow to cool about one minute and transfer to wire rack. Once cooled, keep in airtight container. (You can replace raisins by chocolate pieces or butterscotch).
