White Chocolate Rhubarb Cookies
Ingredients
- 1 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 teaspoon vanilla butter and nut flavoring
- 3 cups all-purpose flour
- 1 cup old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 cups white chocolate chips
- 1 cup finely chopped rhubarb
- 1 cup chopped pecans
Direction
- Set the oven to 175°
C or 350°
F to preheat. Use parchment paper to line 2 baking sheets.
- In a bowl, mix together brown sugar, white sugar and butter, then use an electric mixer to beat until fluffy. Stir in nut flavoring, vanilla butter, vanilla extract, egg yolk and eggs. Put in cinnamon, salt, baking soda, baking powder, oats, and flour then mix until dough is combined.
- Fold into the dough with pecans, rhubarb and white chocolate chips. Drop the dough onto baking sheets with a 1 1/2-in. cookie scoop.
- In the preheated oven, bake for about 18-20 minutes, until edges are firm and bottoms turn browned. Allow to cool on baking sheets for about 5 minutes then remove to a wire rack to cool.
