Whoopie Pies IV
Ingredients
- 2 cups white sugar
- 1/2 cup shortening
- 2 eggs
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons salt
- 3/4 cup unsweetened cocoa powder
- 1 cup milk
- 1 cup boiling water
- 1 teaspoon vanilla extract
- 1 cup shortening
- 1 cup white sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 5 1/2 tablespoons all-purpose flour
- 1 cup milk
Direction
- Set the oven to 230°
C or 450°
F to preheat.
- For Cookies: Cream 2 eggs, 1/2 cup of shortening and 2 cups of sugar together.
- Sift cocoa, 1 1/2 tsp. of salt, baking powder, baking soda and 4 cups of flour. Put into the creamed mixture with flour mixture, boiling water and 1 tsp. of vanilla, alternately.
- Drop onto greased cookie sheet by teaspoons sized pieces. Bake for about 5-7 minutes.
- For Filling: Cook 1 cup of milk and 5 1/2 tbsp. of flour until thickened then allow to cool. Cream together 1 tsp. of vanilla, 1/4 tsp. of salt, 1 cup of sugar and 1 cup of shortening. Put in cooled flour mixture and beat until creamy.
- Use filling to spread on the flat side of a cooled cookie and use another cookie to sandwich together.
