Pawpaw is a fruit similar in taste to bananas. Pawpaw were grown wild and consumed by Native Americans.
INGREDIENTS
Cookies:
1½ cups ripe bananas, mashed
¾ cup unsalted butter, room temperature
¾ cup brown sugar, packed
1 large egg
1 tsp maple syrup extract
2 cups all-purpose flour
¼ tsp salt
1 tsp baking soda
⅛ tsp nutmeg
½ tsp cinnamon
¼ tsp ground cardamom
Glaze:
½ cup unsalted butter, melted
6 Tbsp brown sugar, packed
4 Tbsp cream (or whole milk)
1 tsp maple syrup extract
3 cups confectioners’ sugar
DIRECTIONS
Cookies:
Set the oven temperature to 350 degrees. Add bananas to a blender and puree. Set aside.
Whip butter in a mixer. Add brown sugar and continue to beat until fully incorporated. While the mixer is going, add the egg, followed by the maple syrup extract.
In a separate bowl, combine the flour, salt, baking soda, and spices.
Lower the mixer speed, and alternate adding the banana and flour mix, scraping the sides down while you do so. Repeat these steps two additional times until the butter and flour are fully combined.
Scoop a spoonful of the batter onto a lined cookie sheet. Do not overcrowd the pan as the mixture will spread and puff up. Cook for 12 to 14 minutes in the oven.
Glaze:
While the cookies are baking, prepare the glaze. Combine the butter and brown sugar in a mixing bowl. Add the cream and maple syrup extract, and stir. Add the confectioners’ sugar to the mixing bowl, and blend until fully combined.
Remove the cookies from the oven, and spoon the glaze over the warm cookie. Let cool and watch them disappear.
