STRAWBERRY ROSEMARY CORDIAL

Summer in a bottle! Let the sun sparkle off the beautiful red and pink hues of this sweet berry-and-garden inspired beverage. Share a glass or two with a loved one on the front porch or deck: garnish with fresh berries or a sprig of mint.

25 oz. white brandy

5 cups chopped fresh strawberries

5 sprigs fresh rosemary

1. Wash, stem, and halve strawberries.

2. Place strawberries in bottom of infusion jar.

3. Pour in brandy, covering the strawberries.

4. Place rosemary into alcohol, submerging the strawberries, and seal the jar tightly.

5. Let infuse for 1–3 months or more in a cool place out of direct sunlight, tasting and remixing daily until desired intensity is reached.

6. Strain or rack the cordial into a clean bottle.

7. Add simple syrup (page 113) to taste and tightly cap.

8. Let it rest out of direct sunlight for at least 30 days, preferably a year or more.
