Here’s a delicious, healthful way to use up leftover ham. Green beans make the dish fresh and snappy. Cheddar cheese works great in this, too, if you don’t have Swiss on hand.

1/2 pound fresh green beans, trimmed and cut into 1-inch pieces
1 cup cubed fully cooked ham
1 jar (6 ounces) sliced mushrooms, drained
1 cup (4 ounces) shredded Swiss cheese
1/2 cup finely chopped onion
1/8 teaspoon garlic powder
3 eggs, lightly beaten
1 1/2 cups 2% milk

3. In a small bowl, combine the eggs, milk, biscuit mix, salt and pepper just until blended; pour over ham mixture.
4. Bake 400° for 35-40 minutes or until a knife inserted near the center comes out clean. Let quiche stand for 5 minutes before cutting.
