A favourite vegetable of most Persian Iranians, the aubergine is
featured most famously in Khoresh-e Bademjan (Fried Aubergine Stew).
Pre-meal, appetiser dips prepared with aubergines are not uncommon
in the Middle East, with Arab, Turkish and Lebanese versions.
