Buffalo Turkey Meatloaf

You’ll Need: 9-inch by 5-inch loaf pan, nonstick spray, skillet, large bowl, small bowl

Prep: 20 minutes    •    Cook: 1 hour

½ cup shredded carrots, finely chopped

½ cup finely chopped celery

½ cup finely chopped onion

1 teaspoon chopped garlic

1¼ pounds raw lean ground turkey (7% fat or less)

¼ cup whole-wheat panko breadcrumbs

¼ cup (about 2 large) egg whites

⅛ teaspoon black pepper

⅛ teaspoon cayenne pepper

¼ cup Frank’s RedHot Original Cayenne Pepper Sauce

2 tablespoons Clean & Hungry Ketchup (recipe and store-bought alternatives)

Optional topping: Clean & Hungry Chunky Blue Cheese Dressing (recipe and store-bought alternatives)

1. Preheat oven to 400 degrees. Spray a 9-inch by 5-inch loaf pan with nonstick spray.

2. Bring a skillet sprayed with nonstick spray to medium-high heat. Add veggies and ¼ cup water. Cover and cook until veggies have mostly softened and water has evaporated, about 5 minutes. Add garlic, and cook and stir until fragrant, about 1 minute. Transfer to a large bowl.

3. To the large bowl, add turkey, breadcrumbs, egg whites, black pepper, and cayenne pepper. Add 3 tablespoons hot sauce, and mix thoroughly.

4. Transfer mixture to the loaf pan, and smooth out the top.

5. In a small bowl, combine ketchup with remaining 1 tablespoon hot sauce. Mix until uniform. Spread over meatloaf.

6. Bake until cooked through, about 50 minutes.
