Sweet Potato Casserole

This super-sweet casserole brings a taste of the holidays to any weeknight. With a mix of sweet potatoes, coconut, pecans, and white cake mix, you get a casserole that’s unforgettable.

Ingredients

3 cups mashed sweet potatoes

3 cups granulated sugar

1 cup butter

2 eggs

1 teaspoon vanilla

13 cup milk

1 cup sweetened shredded coconut

1 cup brown sugar

1 cup white cake mix

1 cup pecans

  1. Preheat oven to 350°F.

  2. Mix sweet potatoes, sugar, 12 cup melted butter, eggs, vanilla, milk, and coconut in a large mixing bowl with a wooden spoon. Pour into a buttered baking dish.

  3. In a smaller mixing bowl, mix brown sugar, cake mix, and pecans. Sprinkle dry mixture over potatoes. Dot evenly with remaining butter. Bake for 25 minutes.
