Wendy’s Wonderful Granola

From our friend and Kansas beekeeper, Wendy Webb, comes a great old-fashioned recipe (made with honey, of course!). As a gift from your kitchen, this granola is a star. It can be used to make a breakfast parfait, layered with yogurt and fresh fruit; eaten alone as a snack; or spooned over baked fruit for an easy fruit crisp.

Makes 4 cups; serves 8 Prep Time: 10 minutes Cook Time: 20 to 30 minutes

 

2  cups old-fashioned rolled or steel-cut (Irish) oats

1  teaspoon baking powder

1  large egg, beaten

11/2  cups vanilla-flavored almond milk, rice milk, or skim milk

1/2   cup honey

1/2   cup coarsely chopped walnuts

1/2   cup sweetened dried cranberries or raisins

1  apple, peeled, cored, and finely chopped, or 1/2 cup applesauce

  1. Preheat the oven to 350°F. Line a large rimmed baking sheet or an 8 or 9-inch casserole dish with aluminum foil. Coat the foil with a thin layer of butter or oil.
  2. Combine the oats and baking powder in a large bowl. In a small bowl, whisk the egg, milk, and honey together. Pour over the oat mixture and toss to blend. Fold in the walnuts, cranberries, and apple. Spread the mixture into the prepared pan.
  3. Bake for 20 to 30 minutes, until the edges are slightly brown and the granola is crisp. Store in an airtight container for up to 2 weeks.
