Mexican Fruit Salad with Honey-Lime Dressing

You can hear that little voice inside of you that says, “What can I have that will satisfy my sweet tooth and stay in the good-for-me category?” Whipping up this treat will satisfy that tooth and more—it’s simply fruit in party clothes. This one is a fiesta of colors and flavors that will make you happy that you’re being good to yourself. Use whatever fruit is in season (usually that’s what’s on sale) and vary the colors. This fruit salad will keep, covered, in the refrigerator for up to 3 days.

Serves 4 Prep Time: 5 minutes

 

1 cup chopped fresh mango, papaya, or cantaloupe

1 cup fresh blueberries

1 cup chopped fresh honeydew melon or kiwi

1 cup fresh pineapple chunks

1 cup seedless red grapes or green grapes

1 tablespoon fresh orange zest

1/2 cup fresh orange juice

1 tablespoon fresh lemon juice

1/3 cup honey

1/4 cup fresh lime juice

  1. Combine the mango, blueberries, honeydew, pineapple, and grapes in a large bowl. Stir the orange zest, orange juice, and lemon juice in a small bowl, then pour over the fruit. Toss gently to blend. Cover and refrigerate until ready to serve.
  2. Right before serving, whisk the honey and lime juice together in a small bowl. Pour over the salad, and toss to blend. Serve the salad in glass dishes.
