Converting Recipe Measurements to Metric

In the recipes throughout this book, temperature conversions from Fahrenheit to Celsius have already been given, rounded to the nearest five degrees to provide practical, realistic oven settings.

In measuring most ingredients, whether liquid or dry, American cooks go by volume rather than by weight, using standardized teaspoons, tablespoons, and cups. Occasionally, liquids are measured in fluid ounces, and fruit and canned goods are measured in pounds and (avoirdupois) ounces. The following chart is offered to help overseas readers comprehend our quirky American system.
