Pretty in Pink Pitaya Smoothie

This drink is so pretty, it’s like a pink sunrise in a glass. It’s also loaded with amazing nutrients. The pitaya is low in calories, high in fiber, and full of antioxidants, magnesium, and vitamin C. And the almond butter and almond milk are packed with vitamin E. It’s the perfect drink not just to enjoy but also to boost your immune system. And don’t forget that color — the most beautiful pink on the planet.

1 cup unsweetened almond or coconut milk

1 3.5-oz. packet frozen pitaya or 1 cup fresh pitaya

1 cup frozen raspberries

½ frozen banana

1 heaping Tbsp. almond butter

2–3 pitted dates (preferably Medjool)

½ cup water

1 scoop plant-based protein powder (optional)

  1     Blend all ingredients in a high-powered blender until smooth and creamy. If you want a thinner consistency, add a bit more water.
