Watermelon Coconut Mint Cooler

This mouthwatering, hydrating Watermelon Coconut Mint Cooler will satisfy your every craving during the hottest months of the year. We love to use the coconut water from fresh young Thai coconuts, which have the sweetest and best taste. It takes more work to get the coconut water from these than from other varieties, but it is well worth it. Wait until you taste all of the flavors of the heavenly ingredients in this lip-smacking cooler — it’s one more reason to hope that summer will last just a bit longer!
1 small watermelon
16 oz. coconut water (preferably from young Thai coconuts)
Handful of fresh mint leaves
Juice from 1 lime
1 Cut open, seed, and cube the fresh watermelon. You should have about 6 cups of watermelon cubes. Discard the seeds and freeze the cubes overnight.
2 Place the frozen watermelon cubes, coconut water, mint leaves, and lime juice in a blender. Blend at high speed until the mixture looks like a slushie.
If your kids would like this drink to be a little sweeter, you can blend in 1 Tbsp. of maple syrup or your choice of sweetener.
