Breakfast wouldn’t be complete without a delicious slice of French toast, fresh out of the pan. Our children love this dish, as it has all the comfort-food components a satisfying breakfast dessert should have. It is sweet, rich, crispy, wholesome, and packed with flavor. Boss French Toast is loaded with healthy fats, protein, and essential nutrients. A few servings of this, and not only will your body function optimally, you’ll also have satisfied your guilty cravings! The batter uses nutrient-dense, nonglutinous flour, so you can make this French toast entirely free of gluten if you use gluten-free bread.
1 cup coconut cream
¼ cup unsweetened nondairy milk
2 Tbsp. garbanzo bean flour
2 Tbsp. oat flour
½ tsp. cinnamon
1 Tbsp. maple syrup
1 Tbsp. flax meal
½ tsp. vanilla extract
⅛ tsp. Himalayan pink salt
4–6 slices of bread
½ tsp. coconut oil

1 Heat a nonstick skillet and keep it on medium-low heat while you make the French toast batter. Keeping it warm while you work will save time and energy. The skillet should be hot when you put the toast in it.
2 Place the coconut cream, nondairy milk, two flours, cinammon, maple syrup, flax meal, vanilla extract, and salt in a high-powered blender. Mix until well combined into a batter.
3 Pour the batter into a small baking tray. Dip the slices of bread into the batter, lightly covering both sides and shaking off any excess.
4 Turn the skillet heat up to medium high, add coconut oil to the pan, and carefully lay a slice of the battered French toast in the skillet. Cook for 1–2 minutes on each side, or until it is golden brown. Repeat with the other slices of battered bread.
5 Serve with coconut whipped cream, maple syrup, berries, our Homemade Powdered Sugar, or anything that inspires you!
