Mason Jar Peach Crisp Crumble

MAKES FOUR 8-OZ. JARS

We all love the idea of dessert for breakfast, but rarely is that a healthy choice, as we don’t want to start our day with refined sugars and refined grains. But when you eat this Peach Crisp first thing in the morning, it’ll only taste like you are breaking the rules. Our farm-style breakfast dish is healthy, filling, and good for you. It is loaded with good fats, unrefined sugar, and whole grains. We bake it in individual glass jars to make it easy to serve. This is the kind of meal that’ll make you happy to hear the alarm first thing in the morning!

For the filling

4 cups pitted and chopped fresh peaches (or thawed frozen)

1 Tbsp. arrowroot powder

¼ cup maple syrup

1 Tbsp. lemon juice

Pinch of Himalayan pink salt

½ tsp. vanilla extract

½ tsp. cinnamon

¼ tsp. ginger powder

For the topping

½ cup rolled oats

½ cup spelt flour

¼ tsp. cinnamon

4 Tbsp. melted coconut oil

¼ tsp. Himalayan pink salt

3 Tbsp. coconut sugar

¼ cup pecans

  1     Preheat the oven to 375 degrees F.

  2     Place the chopped peaches, arrowroot powder, maple syrup, lemon juice, salt, vanilla extract, cinnamon, and ginger powder in a large bowl and mix until combined.

  3     In a separate bowl, mix the topping ingredients together well.

  4     Fill one 8-oz. glass jar three-quarters of the way with peach filling. Add one-fourth of the topping mixture on top. Repeat this process with three other 8-oz. glass jars.

  5     Bake in the oven for 15–20 minutes. Let cool for about 5–8 minutes and enjoy!
