This is a refreshing, light breakfast that’s packed with protein and nutrients. You’d be surprised at how flavorful such a simple dish can be! Our family loves to eat this on hot summer afternoons or when we need a little extra color in our lives, as it looks so pretty.
2 Tbsp. olive oil
2 Tbsp. minced red onion
1 tsp. minced garlic
1½ cups frozen green peas
½ tsp. Himalayan pink salt
2 Tbsp. lemon juice
4 slices of bread, toasted
Olive oil (for drizzling)
Zest of 1 lemon (garnish)
Red chili flakes (optional garnish)
1 Heat the olive oil in a small pot, then add the onions and garlic. Sauté over medium heat for 2–3 minutes, or until the onions are soft, then add the frozen peas and salt. Cook for another 5 minutes, or until the peas are soft. Stir in lemon juice and cook for 2 minutes more.
2 Turn the heat off and mash the peas with a potato masher or transfer to a food processor and blend. If you use a food processor, stop occasionally and scrape the sides down with a spatula to get an even blend. But leave some of the peas chunky — you don’t want to create a puree.
3 Spread the mashed peas on the slices of toast and drizzle with olive oil. Sprinkle each with a pinch of lemon zest and red chili flakes, if using.
