MAKES 24 BITE-SIZE PIECES
We spend a lot of our busy lives on the go, dashing from one place to the next. It can be challenging to find a healthy snack to keep our energy up. These bite-size Prana Power Bars are perfect for when you’re on the move. Try one just before your workout or right after — they’ll power you up without making you feel too full. These chocolate beauties have many health benefits: fiber, antioxidants, heart-healthy fats, vitamin C, and lots of minerals, just to name a few. We store them in the freezer and then move half a dozen or so to the fridge so that they’re ready when we need them. The kids love them too as an after-school snack. Who turns down chocolate, after all?
For the dough
1 cup almonds
1½ cups rolled oats
½ cup coconut oil
½ cup shredded unsweetened coconut
¼ cup cacao powder
¼ cup maple syrup
¼ cup goji berries
¼ cup mulberries
¼ cup chia seeds
¼ tsp. Himalayan pink salt
For the chocolate sauce
½ cup vegan chocolate chips
2 tsp. coconut oil
Pinch of Himalayan pink salt
1 Soak 1 cup of almonds in water overnight or for at least 2–3 hours, until soft.
2 In a food processor combine the soaked almonds, oats, coconut oil, shredded coconut, cacao powder, and maple syrup. Pulse until a dough forms.
3 Add the goji berries, mulberries, chia seeds, and salt and process again until everything is well mixed.
4 Take a spoonful of batter and press into a silicone mold (we use a mold that has 1×1-inch squares, but any small shape works) or mini cupcake liner. Flatten out the top. Repeat until you have used all the batter. Freeze for about 1 hour.
5 In a small pot, heat the chocolate chips, coconut oil, and salt until the mixture becomes liquid.
6 Line a baking sheet or large platter with parchment paper. Remove a bar from its mold or cupcake liner and dip one side into the chocolate sauce, then lay it on the parchment paper. Continue until all the bars are half-covered in chocolate.
7 Place in the freezer again until the chocolate hardens, about 30 minutes.
8 Store in an airtight container in the freezer or refrigerator for up to 1 week.
