Holy Mole Guacamole!

MAKES ABOUT 2 CUPS

Guacamole is a universally loved food. I associate it with good times and coming together with people we love. We bring this dish to family dinners, picnics, and game day, and of course it is something we enjoy on our own. Our family can eat this whole recipe in one sitting and still crave more! This version carries those classic creamy and salty flavors that we look for in a rich guacamole.

3 medium-size ripe avocados, peeled, pitted, and cut into chunks

¼ cup finely diced tomato

1 Tbsp. diced red onion

½ tsp. minced garlic

½ tsp. Himalayan pink salt

3 Tbsp. lime juice

1 Tbsp. minced cilantro

  1     Place avocados in a medium bowl and mash them well. Our family likes to keep little chunks of avocado in so that the guacamole isn’t too mushy.

  2     Mix in the diced tomato, red onion, garlic, salt, and lime juice.

  3     Lastly, fold in the cilantro. Serve with tortilla chips.
