MAKES ABOUT 2 CUPS
This truly is the most delicious and easy-to-make recipe in the world. Throw everything into the blender and voilà! Use it for a sandwich spread, a dip for raw veggies, or a spread for just plain old pitas. It’s a great source of plant-based protein that even kids love.
1½ cups cooked organic garbanzo beans
½ cup tahini
3 Tbsp. olive oil
1 garlic clove, peeled
½ cup fresh lemon juice
¼ cup water
¾ tsp. Himalayan pink salt
Pepper to taste
Suggested toppings
Paprika
Parsley sprigs
Toasted pine nuts
Drizzle of olive oil
1 Put all of the ingredients into a food processor or blender and blend until smooth, stopping to scrape down the sides with a spatula as needed. This may need several rounds of processing to get smooth.
2 Top with paprika, parsley, toasted pine nuts, and a drizzle of olive oil, and you will have a beautiful side.
