Cauliflower Mash

SERVES 4–6

Mashed potatoes can be delicious and wholesome, and this dish proves it. Cauliflower Mash is a healthy alternative to standard mashed potatoes, and your kids won’t even notice the difference. The creamy potatoes and the crunchy cauliflower are a winning combination. This side dish is low in carbs, high in fiber, and loaded with vitamin C, along with many other vitamins and minerals, such as potassium and magnesium. We love to eat Cauliflower Mash year-round in our house. It’s a no-brainer in our book.

3 medium-size baking potatoes

1 small cauliflower head

½ cup vegan mayonnaise, such as Vegenaise

Salt and pepper to taste

Finely chopped chives (garnish)

  1     Wash the potatoes well. Peel the potatoes and chop them into large chunks about 1½–2 inches thick.

  2     Place the potatoes in a large pot and fill with water. Bring to a boil and cook for about 10–12 minutes.

  3     While the potatoes are boiling, destem and chop the cauliflower. Add the cauliflower to the potatoes and boil for another 10–15 minutes, until the vegetables are tender.

  4     Drain the vegetables into a strainer, then place them back in the pot. With a potato masher, mash the mixture well.

  5     Add the vegan mayonnaise and salt and pepper to taste and blend well. The dish should be smooth and creamy.

  6     Transfer to a serving bowl or to individual plates. Top it off with some finely chopped chives and serve with Shiitake Holiday Gravy.
