MAKES ABOUT 1½ CUPS
This is the best dairy-free sour cream you will ever have! You’ll find yourself putting it into regular rotation in your kitchen. Many of the ingredients are probably already in your fridge. It’s a dynamic and delicious topping on anything from baked potatoes to tacos. Mix it with a little salsa to make a tasty dip for chips or French fries. You’ll never miss the dairy in sour cream again.
1 cup raw cashews, soaked 6–8 hours
¼ cup water
3 Tbsp. lemon juice
1 Tbsp. apple cider vinegar
½ tsp. garlic powder
½ tsp. onion powder
¼ tsp. Himalayan pink salt
1 Place all of the ingredients in a high-speed blender and blend until smooth.
2 Store in the refrigerator for at least 1 hour before serving. This will help thicken it up and give it the best consistency.
