MAKES ABOUT 3 CUPS
This simple and quick yet colorful salsa is one of our favorites to make on taco night. We are not sure about you, but our family is really big on taco night. In fact, we often have it more than once a week. The sweetness from the mango gives the salsa that extra boost of flavor, contrasting with the salty. This beautiful salsa is so fun and festive, you can toss it on top of nachos, salads, or even an open avocado half. It’s sooooo good!
2–3 mangos, peeled, pitted, and diced, or 2 cups frozen diced mango, thawed
1 cup diced tomato
½ small red onion, finely chopped
½ cup chopped cilantro
½ jalapeño pepper, chopped (more if you like spicy)
2 limes
Salt to taste
1 Toss all ingredients except the limes together in a bowl. Squeeze the juice from the limes over the top. Toss again.
2 Add salt to taste and serve.
How to dice a mango:
1 Find the stem and cut vertically down each side of it. Peel fruit apart into two halves.
2 With a paring knife, cut a grid pattern into the flesh of each half. Be careful not to cut through the skin.
3 With a large spoon, scoop the cut fruit from the mango skin.
