Miso Ginger Dressing

MAKES 1 CUP

Dressing is the key to any salad. It is the paint to a canvas, an instrument in a musician’s hand. It’s that spark that makes us say yay or nay to a bowlful of greens! This dressing is wonderful on a cold soba noodle salad or any Asian-inspired dish. We also use this as a dipping sauce.

2 Tbsp. finely minced ginger

3 Tbsp. sesame oil

¼ cup maple syrup

1 Tbsp. miso

1 tsp. minced garlic

¼ cup soy sauce

¼ cup vinegar

⅓ cup plus 2 Tbsp. olive oil

  1     Place all the ingredients in a high-powered blender and mix until smooth. We like to turn the blender on high for 45 seconds twice.

  2     Pour into a plastic squeeze bottle or a jar and refrigerate for up to 1 week.
