Creamy Vegan Ranch

MAKES ABOUT 1½ CUPS

Get your veggies out and say hello to your new favorite dip! This creamy nondairy ranch is a guilt-free pleasure you can enjoy any time of day. Made with cashews for the creamy texture, it is bursting with healthy fats, fiber, and vitamin B12, along with other vitamins and minerals, such as zinc, magnesium, and vitamin E. This versatile sauce doubles as a dip, so you can pair it with fresh veggies, spread it on a sandwich, dollop it onto a taco, or simply pour it on your favorite salad.

1 cup soaked raw cashews

¾ cup water or unsweetened almond milk

2 Tbsp. fresh lemon juice

1½ Tbsp. apple cider vinegar

1 Tbsp. fresh dill

¼ cup nutritional yeast

1 tsp. garlic powder

1 tsp. onion powder

½ tsp. Himalayan pink salt

  1     Place all the ingredients into a high-speed blender and process until smooth and creamy. If you want a thinner consistency, add 1 Tbsp. of water at a time until you reach the desired result.
