MAKES ABOUT 1 CUP
Mint chutney is a staple in Indian cuisine. Our family loves this variation, and we use it on salads, Samosa Pot Pie, and just about anything that needs some sauce. It is healthy, light, and scrumptious!
1 packed cup destemmed fresh mint
1 packed cup chopped fresh cilantro
2 Tbsp. maple syrup
¾ tsp. Himalayan pink salt
1 cup water
½ cup chopped avocado
¼ cup chopped red onion
2 Tbsp. lime juice
Pinch of chili powder
1 Place all the ingredients in a high-powered blender or food processor and blitz for 45 seconds, or until smooth.
2 Store in an airtight container in the refrigerator for up to 1 week.
