MAKES 1½ CUPS
Pesto is one of our favorite things to make, and you will be surprised at how fast and easy it is to prepare. This mighty pesto sauce will completely transform a bowl of pasta with that extra kick of flavor and goodness. It is packed with healthy omegas and vitamin E. The spinach and basil are an excellent source of vitamin K and are loaded with fiber. We love it so much that we use it for more than pasta. You can spread it on sandwiches, add it to veggie hummus wraps, or serve it in a bowl as a dip for crackers. Sometimes we even use it instead of tomato sauce on a pizza crust. We like the recipe below, but feel free to mix it up and throw in hemp seeds or different greens, like parsley or kale. Yum-yum!
2 garlic cloves, peeled
½ cup walnuts
½ cup pine nuts
1½ cups basil
1 cup spinach
⅓ cup olive oil
¼ cup nutritional yeast
½ tsp. Himalayan pink salt
1 In a food processor, pulse the garlic cloves until finely minced.
2 Add the walnuts and pine nuts and pulse again.
3 Next, add the basil, spinach, and olive oil and pulse until smooth. You will have to stop a few times and scrape down the sides with a spatula. If the mixture is too thick, try adding 1 Tbsp. of additional olive oil or water.
4 Lastly, pour in the nutritional yeast and salt and process until smooth.
5 Add to your favorite pasta and indulge!
