Brown Rice Crispy Treats

MAKES 9–12 BARS

A chewy, gooey Rice Krispies Treat is mouthwateringly delicious. We’ve come up with a heavenly alternative that is just as tasty and guilt free! Whole-grain brown rice, almond butter, and maple syrup are the main ingredients, and together they provide healthy fats and fiber, along with all sorts of vitamins and minerals, including calcium, copper, magnesium, and vitamin E. Whether you’re indulging on your own or sharing with family and friends, you’ll be reaching for more — and why not?

½ cup almond butter

⅓ cup maple syrup

1 tsp. vanilla extract

3 cups brown rice cereal, such as One Degree

  1     Line the bottom and sides of a 9×9 baking pan with parchment paper. We like to cut two pieces of parchment paper and lay one down in each direction so the paper doesn’t bunch up in the corners.

  2     In a small pot over medium to low heat, stir and melt the almond butter, maple syrup, and vanilla extract together for 30 seconds to 1 minute, until the mixture is soft and blended.

  3     Turn off the heat. Add the brown rice cereal and stir together until the cereal is thoroughly coated in the almond butter mixture.

  4     Pour the rice crispy goo into the parchment paper-lined pan. Use another piece of parchment paper to help you press the mixture evenly into the pan with your hands. The paper will prevent the mixture from sticking to your fingers.

  5     Chill the treats in your fridge for 30 minutes. Cut into pieces and serve.
