Creamy Chocolate Pudding

You are never going to guess what secret ingredient this pudding contains: avocado! Your kids will never know it’s there. I love making this pudding in the summer and dipping fresh strawberries from our local farmers’ market in it. Blueberries and raspberries are great toppers, too, plus a little splash of hemp seeds. Or simply dice a banana on top. This pudding is raw, except for the maple syrup. It is packed full of healthy fats, antioxidants, and fiber. We would make a double batch if we were you!

½ cup maple syrup

½ cup raw cacao powder

2 large or 3 small ripe avocados, peeled and pitted

1 tsp. vanilla extract

½ cup water

Pinch of Himalayan pink salt

  1     In a food processor, add the maple syrup, cacao powder, and avocados. Process until well combined.

  2     Add the vanilla extract, water, and salt and process to get the desired consistency. The amount of processing time will vary according to the size of your avocados. The pudding should be creamy and completely smooth, so you might have to process longer than you think.

  3     Chill for 30 minutes to 1 hour and serve.

  4     Store in an airtight container in the fridge for 3–4 days.
