MAKES 15–18 ONE-INCH BALLS
Need a chocolate fix? These bite-size brownies are the perfect snack for chocolate aficionados and novices alike. Made with raw walnuts, dates, and cacao powder, they are loaded with antioxidants, omega-3s, vitamin E, magnesium, iron, and fiber. You can enjoy them for breakfast, as a pre- or postworkout treat, for an afternoon snack, or as a dessert. Bring a batch to a dinner party and watch them disappear in seconds!
1½ cups walnuts
1½ cups pitted dates (preferably Medjool)
½ cup raw cacao powder
¼ tsp. Himalayan pink salt
1 Place the walnuts in a food processor and process until they become a fine flour.
2 Add the dates, cacao powder, and salt. Process until they form a sticky mixture.
3 Roll them into 1-inch bite-size balls or pat them into an 8×8-inch pan lined with parchment paper.
4 Store in an airtight container for up to 1 week (if they last that long!). They can be refrigerated or left on the countertop at room temperature.
