Sweet and Salty Bites

MAKES 10–15 ONE-INCH BALLS

These Sweet and Salty Bites are filled with a burst of flavors. First, think chocolate chip cookie dough. Sweetness from dates and chocolate chips. Then, there’s a perfect contrast of saltiness from cashews and Himalayan pink salt. The best of both worlds! The dates provide steady energy, and the cashews are rich in vitamin E, magnesium, and zinc. A perfect snack!

1½ cups raw cashews

1½ cups pitted dates (preferably Medjool)

½ cup vegan chocolate chips

½ tsp. Himalayan pink salt

2 tsp. vanilla extract

1 Tbsp. water

  1     Pulse the cashews in a food processor until they are reduced to a fine flour. Add the dates, chocolate chips, salt, vanilla extract, and water and pulse again until all the ingredients stick together. You may need to stop and scrape down the sides with a spatula.

  2     Roll the mixture into bite-size balls and set them on a serving plate.

  3     Refrigerate for about 30 minutes. Remove from the fridge and serve.

  4     Store in an airtight container for up to 1 week (if they last that long!).
