Serves 4
5 tomatoes, quartered
2 T. olive oil
1 T. red wine vinegar
1 T. fresh basil, chopped
1 clove garlic, minced
salt and pepper to taste
Garnish: seasoned croutons, crumbled feta cheese
Place tomatoes in a serving bowl; set aside. Whisk together oil, vinegar and seasonings. Pour over tomatoes, tossing well. Serve chilled or at room temperature, garnished with croutons and cheese.
Pop unripe tomatoes into a brown paper grocery bag and store in a dark closet. They’ll ripen overnight!
