Serves 6
6 to 8 potatoes, peeled and quartered
1/4 c. butter, softened
8-oz. pkg. cream cheese, softened
salt and pepper to taste
Boil potatoes until tender; drain. Combine potatoes, butter and cream cheese in a large bowl; let stand for 10 minutes, or until cream cheese melts. Mash until smooth. Refrigerate until serving time; reheat in a microwave.
Cooking potatoes ahead for later use? Keep them light in color by covering them with cold water and adding a little vinegar.
