Serves 4
6-oz. can tuna, drained
1/2 c. cucumber, chopped
1/2 c. carrot, peeled and shredded
1/4 c. green onion, diced
1/4 c. mayonnaise
2 T. Dijon mustard
2 T. sour cream
1 T. lemon juice
pepper to taste
8 slices white or wheat bread
4 leaves lettuce
Combine first 9 ingredients in a bowl. Spread onto 4 slices bread; top with lettuce leaves and remaining bread.
Look for tuna in vacuum-sealed foil pouches with no need to drain…ideal for camping or picnic fare.
