12-oz. can corned beef, chopped
1/4 c. onion, diced
3 T. mayonnaise
1 T. mustard
1-1/2 t. horseradish
8 hamburger buns, split and toasted
8 slices American cheese
Combine corned beef, onion, mayonnaise, mustard and horseradish in a bowl; mix well. Spread corned beef mixture on toasted bottom halves of buns. Top with cheese slices and toasted bun tops. Wrap each sandwich in aluminum foil; bake at 350 degrees for 15 minutes, or until cheese is melted.
Turn leftover bits & pieces of cheese from the fridge into a scrumptious sandwich topping. Just shred cheese and stir in enough mayo to make a spreading consistency. Pack in a jar for your cooler.
