Baked Cinnamon Apple Chips

Preheat oven to 200 degrees F. Slice the apple thinly and discard seeds. Line a baking sheet with parchment paper. Arrange the apple slices on the sheet, with no slices overlapping. Sprinkle the slices with cinnamon.  Bake for about an hour, then flip each slice and bake for another hour or until the slices are no longer moist. Makes 1 to 2 servings.

Guacamole Stuffed Baby Peppers

Preheat your oven to 350 degrees F. Pull the white membrane and seeds from the peppers. Arrange the peppers on a baking sheet and bake for 10 minutes or until tender. Remove from the oven. Mash the avocados with the lime juice, cilantro, hot sauce, and salt. Spoon about a tablespoon of guacamole into each pepper half. Top with bacon crumbles. Makes 6 servings.

Kale Chips

Preheat oven to 325 degrees F. Wash and dry the kale and place in a large bowl. Pour the coconut oil over the kale, cover the bowl, and shake to coat. Spread the kale onto a large baking sheet and sprinkle with salt. Bake for 20 to 22 minutes or until crispy. Makes about 8 servings.

Low Carb Bread

Preheat the oven to 350 degrees F. Use the coconut oil to grease a loaf pan. In a food processor, combine the flours, flax, salt, and baking soda and pulse until well-mixed. Add the eggs, remaining coconut oil, honey, and vinegar and pulse to combine. Pour the batter into the loaf pan and bake for 30 minutes or until top is set and springy.

Almond Crackers

Preheat oven to 325 degrees F. Mix together all of the ingredients until a stiff dough forms. Line a baking sheet with aluminum foil. Using a spatula, spread the dough onto the sheet in a thin rectangle. Cut the dough into cracker-sized squares with a knife or pizza cutter. Bake for 10 to 12 minutes or until golden brown. Add salt to taste.

Tuna Bites

Sauté the onion in the olive oil with the herbs and garlic salt until translucent. Mix all of the ingredients, including the onions, in a large bowl. Drop tablespoonfuls of the mixture onto a greased skillet.  Cook for 10 minutes, then flip and cook for another 10 minutes. Makes 3 servings.

Cayenne Deviled Eggs

Cut the eggs in half. Remove the yolks and put them in a bowl. Mash the yolks thoroughly, then mix in the mayonnaise and mustard little by little until you reach the desired consistency. Add the cayenne and chili pepper to the mixture, again tasting as you go. Fill the egg white halves with the yolk mixture. Sprinkle more cayenne on top of the eggs. Makes 16 servings.

Mexican Style Guacamole

Finely chop the avocado, tomato, jalapeno, onion, and cilantro. Put everything in a bowl, along with the lime juice. Mix and mash together. Alternatively, process in a food processor or blender. Add salt, pepper, and garlic to taste. Makes 8 servings.

Bacon And Cheese Stuffed Mushrooms

Preheat oven to 350 degrees F. Remove the stems from the mushrooms. Clean the mushrooms and set aside. Fry the bacon until crisp, reserving the grease. Cook the onion in the bacon grease until tender. Crumble the cooked bacon into the cream cheese. Add the onion. Scoop the mixture into each mushroom cap and bake for 10 to 15 minutes, then broil to brown the tops.  Makes 15 servings.

Egg Salad

Directions

Remove all of the yolks except for one from the eggs. Chop the egg whites and the remaining yolk and place in a mixing bowl. Stir in the mayonnaise, celery, and onion powder. Season with salt and pepper to taste. Makes 2 servings.
