Preheat oven to 350 degrees F. Form the sausage into 4 to 6 burger patties. Sprinkle the patties with salt and pepper and a little garlic powder. Heat up a cast iron skillet over medium-high heat. Place in the skillet the bacon fat and minced garlic cloves. Sauté for a few minutes, then add the burger patties to the pan and sear on each side for 3 to 4 minutes. Move the skillet to the oven and cook for another 8 to 10 minutes or until the burgers are cooked through. Whisk together the honey and mustards. When the burger patties cool, top them with the honey mustard and avocado. Makes 4 to 6 servings.

Preheat the oven to 325 degrees F. Cook the green beans in a medium pot as directed on the packaging. Drain the beans well. In a large stock pot, melt the butter and sauté the mushrooms, celery, and onion until the vegetables are soft and beginning to brown. Add the broth and bring to a boil. Let the liquid reduce by half, then stir in the cream. Bring the mixture back to a boil. Turn down the heat a bit and cook until reduced and thickened. Season to taste.
Add the green beans to the stock pot and stir well. Mix in the cheese. Add salt and pepper to taste. Transfer the mixture to a large casserole dish and bake for 15 to 20 minutes or until hot and bubbly. Makes 4 to 6 servings.

Heat 2 tablespoons of the oil or butter in a skillet. Cut the chicken into very small pieces and add them to the pan. Cook until done all the way through.
In a bowl, combine the green onions, cilantro, lemon juice, chili sauce, sesame oil, and soy sauce. Add the cooked chicken to the bowl.
Re-oil the skillet with the remaining butter or oil and sauté the mushrooms, onion, and garlic for about 10 minutes. Add these vegetables to the bowl with the chicken. Toss everything to coat.
Remove the stem of the lettuce head with a lettuce knife. Slice the head in half, lengthwise. Peel the lettuce into individual “cups” and wash. Fill each lettuce cup with the chicken mixture and top with avocado.

Preheat oven to 450 degrees F. Place the salmon fillets on a parchment-lined baking sheet. Rub the olive oil and Dijon mustard into the salmon fillets. In a small bowl, mix together the coconut flour, parsley, salt, and pepper. Sprinkle the coconut flour mixture on top of the salmon. Bake for 10 to 15 minutes or until opaque and flaky. Combine in a large mixing bowl the parsley, paprika, cumin, salt, and pepper. Use yours hands to crumble the lamb into the bowl and knead all of the ingredients together. Moisten your hands with some water, then take about a tablespoon of the lamb and roll it into a ball between your palms. Place it on a baking sheet. Continue to roll until all of the meat is formed into balls and lined up on the baking sheet.
Heat the oil in a large pot. Add the onion and sauté until soft and translucent (about 5 minutes). Then add to the pot the garlic, cumin, paprika, salt, and pepper and stir for a minute or two. Add the chopped tomatoes, tomato juice, parsley, and water, and stir. Bring the sauce to a boil. Gently drop the meatballs into the sauce, cover, and reduce heat to simmer. Cook, covered, for 40 minutes, then remove the cover and cook an additional 20 minutes.

Preheat your oven to 400 degrees F. Knead together in a large bowl the beef, bacon pieces, garlic, chives, and cream. Season with salt and pepper to taste.

Melt the butter in an oven safe skillet. Add the onion and sauté until translucent and soft. Add the tomatoes and mushroom and cook for a few minutes. Add the spinach and cook for 5 minutes longer.
Scramble the eggs and cream together. Spread the vegetables in the skillet evenly, then pour the egg mixture over the vegetables. Lower the heat to medium. Cook until eggs start to turn solid. Spread cheese on top of eggs and put under the broiler in the oven on low. Broil for 6 minutes or until the cheese is golden brown.

Cut off the wing tips, then cut the wings at the joint. Put the wings in a plastic bag and set aside. Stir together the melted butter, hot sauce, and spices. Pour all but 2 tablespoons of the marinade over the chicken pieces in the plastic bag. Seal the bag and let marinate at room temperature for half an hour. Then drain the marinade and discard the bag.
Broil the wings in your oven’s broiler 4 to 5 inches from the heat for about 10 minutes on each side, until the chicken is tender and no longer pink. Remove from oven. Baste with the reserved marinade. Makes 12 servings.

Heat the oil in a large skillet over high heat. Sauté the garlic in the oil until translucent. Add the red pepper flakes and paprika to the oil. Add the shrimp and toss to coat. Add the chopped red bell pepper and chopped spinach to the ground beef and mix. Pour the ground beef mixture evenly into the baking dish. Preheat oven 450 degrees F. Rinse and pat the fish dry with a paper towel. Season the fish with your favorite herbs (I use thyme and rosemary). Bake for approximately 5 minutes.
In the meantime, mix the lime juice with the olive oil. Remove the fish from the oven and drizzle the lime mixture over the fillets. Sprinkle with Parmesan cheese. Put under broiler for 2 minutes or until top of fish starts to brown. Makes 3 servings.
