GRANOLA, BY most standards, is an imposter. It goes by the name of “health food,” but is anything but. Most granolas are loaded with sugar and fat—not exactly the combo you want for a slim, healthy body. Here’s a granola that takes out the fat, the sugar, even the gluten, without sacrificing the delightful taste of traditional granola. Enjoy it with homemade 99 percent lactose-free Banana Super Yogurt (here), your favorite yogurt, or simply as a snack.

2 | grams (about 2 tablespoons) gluten-free banana puffs (such as Happy Puffs; look near the baby food) |
¼ | unsalted brown rice cake (such as Lundberg; about 5 grams) |
3.5 | grams freeze-dried apple (such as Just Apples) |
2 | grams freeze-dried strawberries (such as Just Strawberries) |
½ | teaspoon coconut nectar (such as Coconut Secret) |
½ | packet monk fruit powder (such as Monk Fruit in the Raw) |
½ | packet stevia powder (such as Stevia in the Raw) |

1. Preheat the oven to 325°F.
2. Spray a small nonstick ovenproof skillet with cooking spray and place it over medium-high heat. Lightly chop the chestnut into small pieces (but not so that it’s powdery) and add it to the pan. Cook the chestnut, stirring, until it is beginning to toast. Transfer the pan to the oven and cook until the chestnut pieces are crisp, about 3 minutes. Leave the oven on.
3. Meanwhile, lightly chop the puffs, rice cake, and freeze-dried fruits into roughly ½-inch pieces. Remove the pan with the chestnut pieces from the oven and add the coconut nectar, monk fruit, stevia, and a pinch of salt. Add the chopped puffs and fruit and stir with a rubber spatula until everything is coated.
4. Scrape the mixture onto a nonstick baking sheet, spread it out in an even layer, and bake until dry and crisp, about 5 minutes. Stir the mixture after 5 minutes. Remove the pan from the oven and let cool.
