AUTUMN SNACK CLUSTERS

I GOT tired of spending big bucks on PowerBars, so I decided to create my own. It’s made from vegetables and a little dried fruit and it tastes just like a PowerBar. I use parsnips here for their naturally sweet flavor and high fiber content. They work so well with sweeter flavors and are a great low calorie density bulking agent. Opt for the larger super hard roots and peel like a carrot. I also added a little cocoa powder and coconut crystals for sweetness. I use beets frequently in my desserts and have done so here as well. The result is a killer snack.

Ingredients:

¼ cup peeled grated raw beet
½ cup peeled grated parsnip
Kosher salt
¼ teaspoon cinnamon
tablespoons coconut crystals (such as Coconut Secret)
1 packet stevia powder (such as Stevia in the Raw)
2 tablespoons crumbled freeze-dried cinnamon-apple crisps (such as Crunchies)
¾ teaspoon unsweetened cocoa powder

Method:

1. Preheat the oven to 325°F.

2. Combine the grated vegetables in a large microwave-safe bowl and season lightly with salt. Microwave on high until the vegetables are tender, about 1 minute, then stop, stir, and microwave for 1 minute more.

3. Mix the cinnamon, coconut crystals, and stevia into the vegetables, then form the mixture into 2 even-sized balls. Roll each ball in the crushed apple crisps so they are lightly coated, pressing lightly so the crumbs stick.

4. Place the balls on a wire rack set over a baking sheet and bake until the outsides are dry to the touch and the balls have firmed up a bit, about 10 minutes. Cool the balls in the refrigerator or freezer until cool, then sprinkle with the cocoa powder and serve.

Tips:

• Try adding 1 teaspoon pure vanilla extract to this recipe for added aroma.

• Try adding 1 teaspoon erythritol if you like things a little sweeter.
