CRISPY BROWN RICE AND WASABI SNACK

HERE’S MY version of a tasty trail mix. I carry it with me, especially when traveling, for a quick pick-me-up snack. You’ll find ingredients here not found in conventional and commercial mixes: nori, a parchment-thin dried seaweed usually found wrapped around sushi; wasabi powder, a spicy Japanese seasoning; and Granny Smith apple chips, a new product I’ve discovered that adds some necessary sweetness.

Ingredients:

1 unsalted brown rice cake (such as Lundberg), crumbled into bite-sized pieces
2 sheets nori (2.5g per sheet)
2 tablespoons no-sugar-added Granny Smith apple chips (such as Bare Fruit)
Olive oil cooking spray
¼ teaspoon natural wasabi powder (such as Eden)
2 teaspoons monk fruit crystals (such as Lakanto Golden Sweetener)
Kosher salt

Method:

1. Place the crumbled rice cakes into a bowl. Tear 1½ sheets of the nori into 1-inch pieces, then chop the remaining ½ sheet into tiny, powderlike pieces, and add them to the bowl.

2. Place the apple chips on a cutting board and gently smash them with a meat mallet or the side of a chef’s knife or cleaver, and add them to the bowl.

3. Spray the mixture for ½ second with cooking spray and sprinkle the wasabi, monk fruit, and salt into the mixture. Stir to coat evenly.

4. Spoon into a snack bowl, and serve.

Tip:

Use this as a base for any snack mix and add what you love. Try hemp hearts, flaxseeds, or toasted shelled pumpkin seeds.
