Makes 4 servings
1 bunch broccoli, cut into flowerets
1 lb. beef tenderloin, sliced into thin strips
1 T. fresh ginger, peeled and grated
3 cloves garlic, pressed
1/4 t. red pepper flakes
1 to 2 t. olive oil
3/4 c. chicken broth
3 T. soy sauce
1 T. cornstarch
1/2 t. sesame oil
Cover broccoli with water in a saucepan. Bring to a boil and cook until crisp-tender, about 3 to 5 minutes. Drain; set aside and cover to keep warm. Toss beef with ginger, garlic and red pepper flakes. Add oil to a skillet over medium-high heat. Add beef mixture and cook for 2 to 3 minutes, stirring constantly, until beef is lightly browned. Whisk together remaining ingredients and add to skillet; heat to boiling. Cook and stir for one minute, or until sauce thickens slightly. Add broccoli and toss to coat.
