Taco Pasta Skillet

Serves 6

1/2 lb. lean ground beef, browned and drained

1-1/4 oz. pkg. taco seasoning mix

11-oz. can corn, drained

14-oz. can black beans, drained and rinsed

1 c. salsa

3 c. hot water

1 c. penne pasta, uncooked

1/2 c. cream cheese, softened

1 c. shredded Mexican-blend cheese

Place all ingredients except cheeses in a large, deep skillet over medium heat; mix well. Simmer for 15 minutes, or until pasta is tender. Stir in cheeses and continue to cook until cheese is melted.

Make your own taco seasoning mix! In a jar, combine 3/4 cup dried, minced onion, 1/4 cup each salt and chili powder, 2 tablespoons each cornstarch, red pepper flakes, ground cumin and dried, minced garlic and one tablespoon dried oregano. Four tablespoons of mix equals a 1-1/4 ounce envelope.
