Smoked Sausage & Veggies

Makes 4 servings

1 lb. smoked pork sausage, thinly sliced

4 potatoes, cooked and cubed

1 sweet onion, cut into chunks

1 green pepper, cut into chunks

Optional: cooked rice or egg noodles

In a skillet over medium heat, combine all ingredients except rice or noodles. Cook until onion and pepper are tender and sausage is browned. Serve over cooked rice or noodles, if desired.

Only using half an onion? Rub the cut side with butter or olive oil, store in the fridge in a plastic zipping bag, and it will stay fresh for weeks.
